A small Bakery in Newport on the Northern Beaches, owned by the German-Australian couple Christian Tydecks and Christine Zinselmeyer.
The Blue Moon Bakery specialises in traditional Sourdough Baking. The breads are made with our own levain, which is a natural sourdough culture (or starter), and are made without commercial yeast. We use the traditional 'poolish' method, a combination of unbleached wheat flour and rye flour set aside to ferment before being added to the final dough.
Most importantly, the breads do not contain any preservatives or additives, and no oils or sugars are added - all of the above are often used in commercial breads to speed up the baking process and add flavour and structure to the bread artificially....The natural and wholesome flavour of Blue Moon Breads are purely achieved by a long fermantation process before baking. And yes, all our breads are low GI.
